Ras Malai

Ras Malai is a delectable Indian dessert made from soft, spongy cheese balls (chenna or paneer) soaked in sweet, flavored milk or cream (rabri). The cheese balls are cooked in sugar syrup to retain their softness and are then immersed in thick, saffron-infused milk that’s flavored with cardamom. The creamy milk base is often garnished with slivers of pistachios, almonds, and a touch of saffron, adding richness and color.
